what I eat | vegan healthy koshari

it’s April so the weather is fantastic
here in Saudi Arabia it’s raining and
it’s like foggy a little bit like as foggy as Saudi Arabia
or like Riyadh gets. I know
like for most people are like rain are
you kidding me but here we love rain
because we don’t get it very often
obviously
let’s make breakfast
this is so frozen
yeah I forgot to put these out
beforehand I’m gonna go run some water
over this just so it loosens up a little
bit

anyway so this recipe is inspired from
that rose pink latte I had when I was in
Dubai so I was like oh I’m gonna make a
smoothie bowel out of it
so I got some rose water and for the color I’m gonna
use beets
all right almost there
yeah I packed this one
so for the base
I’m using frozen cooked butternut squash
or pumpkin I don’t want the flavor here
I’m just using it as a base you can use
bananas if you want you can use mangoes
I guess mmm I don’t know no mangos wouldn’t be good
I’m just gonna add a very small
piece of beets if you’re not used to beets
add even less so I’m gonna add cooked
and frozen about 30 grams or like a size
of a golf ball actually, I just
remembered I’m gonna add the beets at
the end so the color kind of like swirls
in if that makes sense
a little bit of vanilla extract and then
I’m gonna add a little bit of lemon zest
next time I’m thinking about adding a
little bit of lemon juice to see how it
goes just don’t go overboard with the
lemon zest
but it smells so good
God, what is this
all right I gotta open just kidding
oh there you go interesting mmm smells
so rosy it’s a tiny bit so I just added
half a teaspoon and then if you want you
can also add like vanilla protein powder
that would go well with it if that’s
what you do otherwise it’s ready to go
and actually that’s what I’m gonna do
and then I’m going to add about half a
cup of water I might need more I usually
just like see as I go if I needed more
I’d add more
okay now I’m going to add
the beets and more water again these are
cooked and frozen
okay the color didn’t
turn out the way I wanted it like I
wanted it to be degrees of pink but that
didn’t happen
today but it’s okay it’s still a very
beautiful color
I love adding mulberries to my smoothie
bowls because the smoothie is so cold so
they harden up and they become super
crispy
and so sweet because the way I
make my smoothies I don’t make them too
sweet I know they look super sweet but
they’re not
that’s how I like it so for
me adding more berries it just adds the
perfect balance
and yeah I’m gonna

all right so we’re making Koshari
I’m snacking on some cucumbers and some
bell peppers
I already have the rice and
the lentils cooked so today I’m just
gonna make the tomato sauce for the Koshari and add the chickpeas on top I’m
gonna do the garlic first and then the
tomatoes

these are such
tiny garlic cloves it’s really hard to
work with them
first I’m just gonna saute
the garlic
roughly chop the tomato and
put it in the blender
oh! Something’s burning
now I’m gonna go blend this up
Bubbly bubbly
some salt
and a
little bit of cumin
so about two tablespoons of tomato paste
and in case
you’re wondering
here’s of the koshari
basically
typically they do it with white rice but
I’m making it with brown rice lentils
and a little bit of pasta
we’re gonna cook this until it reduces in size and
it becomes a nice thick sauce
all right look better the last time I
made it so next time I’m just gonna make
the rice fresh because I don’t know for
me
leftover brown rice is on the best
but koshari, if you go to Egypt you have to
have Koshari in Egypt there’s
nothing not even this like to be honest
like the koshari in Egypt

they add pasta to it I have a little bit
of pasta in here but not much
the smell
of this hot sauce
no wonder it’s been around for years

to talk about number one is cambly what
is calmly calmly is an online service to
learn English and honestly it’s one of
the best English learning or language
learning services I’ve ever seen because
what makes it very beneficial is that
you speak with a real person face to
face or like through the screen so you
really build up the courage to speak in
this new language which i find to be the
hardest thing for
most people what I love about Cambly is
that obviously I tried it before telling
you guys about it
so what really blew my mind is that the
quality of the videos because I do a lot
of meetings online usually struggle with
the quality of the video or with the
voice but with cambly like none of that
happened especially because I have such
an average internet speed so I I thought
it’s gonna be annoying and it’s gonna
cut through but none of that happened
and the people I spoke with like I spoke
with a guy from South Africa
and it was so interesting to talk to him
he was very knowledgeable and then I
spoke with this American lady and she
was also like her like her knowledge and
her experiences were beyond amazing so
since my viewers are half-arab speak
speakers and then half international I
would say maybe if you’re if you’re a
native English speaker you can like
apply to them and work with them maybe
and if you are trying to learn English I
highly highly recommend cambly they gave
