[lauren] well, last time we did the pasta challenge or the pAsta challenge
[lauren] and i took home the gold with my macaroni skillet.
[john] there’s no rhyme or reason.
[john] this challenge. i thought
[lauren] everyone thought it was yours!

[john] i thought i figured it out.
[john] but today we’re doing the vegan taco challenge.
[john] and it’s redemption time for diemer.
[lauren] so you think. everyone loves tacos, our easy vegan taco video is actually
[lauren] one of the most popular videos we’ve ever done.
[lauren] i think taco, or vegan taco is a good search term.
[lauren] so we’re going at it today. i’ll be making a taco, john will be making a taco.
[lauren] and you will decide which is the better version/
[john] who will tac-home the victory?
[lauren] like take home?
[lauren] all we know is we’re using taco shells. the rest is left to the imagination.
[lauren] let’s do it.
[john] i’m in it to win it. i don’t know about you.
[john] i take these very serious.
[lauren] i take everything we do seriously so i don’t really see a difference.
[john] my plan
[john] is to make some delicious hashbrowns. out of these potatoes.
[john] with these hashbrowns,
[john] i’m going to add them into a taco with other breakfast foods
[john] and make a breakfast taco.
[lauren] well, i think you’re already winning then.
[john] what do you got?
[lauren] cos people are obsessed with breakfast.
[john] if i was on like topchef,
[john] or like masterchef or like any cooking competition and they were like
[john] “make a dish that’s like, that’s you on a plate”
[john] this is me on a plate. breakfast, tacos.
[lauren] breakfast. yea
[lauren] you’re just missing pizza.
[lauren] watch that knife, geez.
[lauren] so i just cut up some butternut squash. little tiny cubes.
[lauren] and we’re gonna make crispy butternut squash tacos which are my favourite and i love them.
[lauren] and i’m gonna make jalapeno ranch sauce.
[lauren] and add some like veggies, like sprouts and red peppers.

[lauren] created by lauren toyota so now it’s going to be in video form.
[lauren] okay well anyways i’m going to get my dredging station ready for my butternut squash cos we’re gonna batter them
[lauren] and put crispy breadcrumbs on them and then deep fry these little cubes and they’re gonna be delicious.
[john] i’m gonna cook these potatoes,
[john] and make them super crispy and awesome.
[john] i cut the potatoes into little cubes so it’ll cook faster in the pan.
[john] i lightly oil the pan with coconut oil,
[john] and then just add the potatoes to fry them.
[john] i topped with salt and pepper, i’m also gonna add a quarter teaspoon of cumin,
[john] paprika, and chili flakes.
[john] i’m browning vegan sausage for my tofu scramble.
[john] we already have an existing tofu scramble recipe, it’s pretty awesome on the blog
[john] so i’m just gonna adapt it a little bit for the tacos.
[john] i’m adding kale, black beans and green onions.
[john] kay i’m going to bring back the vegan sausage now,
[john] and last but definitely not least, i’m gonna cover these with some vegan cheddar cheese,
[john] i’m going to cover it, let it melt while i get the rest of the tacos ready.
[lauren] we’re gonna make a really easy jalapeno ranch with
[lauren] some vegan mayonnaise,
[lauren] then add half of a lime,
[lauren] and you’re gonna add dill.
[lauren] onion powder. and pickled jalapenos in brine
[lauren] now we’re gonna blend it until smooth.
[lauren] just refirgerate the sauce until you’re ready to eat the tacos.
[lauren] so get your dredging station together for the butternut squash
[lauren] and you’re gonna have flour in one bowl,
[lauren] and then almond milk in another bowl,
[lauren] and we’re gonna do breadcrumb seasoning in the last bowl,
[lauren] and we’re just gonna add chipotle chili powder,
[lauren] garlic powder, we’re gonna add cumin,
[lauren] and sea salt.
[lauren] so you’re gonna take your butternut squash and you’re gonna coat all the pieces in the flour.
[lauren] make sure every side is coated.
[lauren] so from here you’re gonna take a few pieces and put them in the almond milk.
[lauren] make sure those get well coated as well.
[lauren] and then take these pieces and dunk them and coat them in breadcrumbs.
[lauren] just keep them all separate.
[lauren] so get them all coated and then you’re gonna go to the deep fryer.
[lauren] your oil should be heated to 375F,
[lauren] and you’re gonna do about 4-5 pieces at once.
[lauren] and they take about two minutes per batch.
[lauren] so for my tacos i’m just gonna thinly slice a red pepper,
[lauren] i’m also gonna add sunflower sprouts,
[lauren] and i’m gonna dice an avocado.
[lauren] you’re going down.
[john] that is a good recipe.
[lauren] these are so good.
[john] you forget to put
[lauren] that’s not even funny.
[lauren] alright, so i’m about ready to assemble my tacos, my butternut squash tacos
[lauren] stop tasting all my food, where’s your food?
[lauren] overcooking in the back?
[john] yea. assembly time. breakfast versus boring.
[john] let’s do it.
[lauren] well, these both look very tasty, and i’m very excited about all of the tacos we get to eat.
[john] i think that
[john] we both win because we both get to eat tacos today for breakfast
[lauren] everyone’s a winner but not really
[lauren] you know how this works, you’re going to vote for who made the better taco,
[lauren] we suggest making both recipes and then making a proper decision based on taste and creativity and all those things
[john] we know all y’all are doing that.
