– And today I’m gonna not only
be showing you but showing Choyce
how to make my favorite
sweet potato fajita tacos.
I love tacos, burritos.
Mexican food’s probably one
of my most favorite foods.
I absolutely love it,
can eat it almost three
or four times a week.
I think it’s ’cause
I used to work at Taco Bell.
It was my first job,
and that was my first
experience with Mexican food.
So I think over the years I felt deprived,
and when I really
experienced real Mexican food
I was like honey, I got some years
of catching up to do.
So anywho, that’s my business
and I can do that if I want to.
But let’s talk about what goes
in my sweet potato fajita tacos.
So of course we got to
have sweet potatoes,
A little bit of mushroom,
some red, but it’s purple, onion,
a little cilantro,
a little jalapeno ’cause I like
a little sweet with some heat,
to you know meet partway in the middle.
– You made a rhyme girl.
– Did you catch that?
Yes.
Then of course some lime
for a little splash of lime juice,
Avocado, we have some like pico de gallo,
some mango de gallo.
But let’s talk about the seasonings,
and how we get it right, okay?
What you got there, Choyce?
– So this is our taco seasoning.
– Yes, so we use a little bit
of taco seasoning ’cause
we are makin’ a taco.
Just to give it a little
bit of flavor there.
– And our favorite.
Garlic.
– Garlic powder. (laughs)
– This one is garlic
and herbs season blend.
– So it is garlic powder
with a couple other spices included.
– This is just a all around spice.
– [Tabitha] Yes, so this is a multi-spice.
This is salt free.
I don’t like to use a lot of salt.
I use a little bit of those,
but whole lot of this
because this is just a bunch of spices.
When you don’t cook with a lot of salt,
you can later it on up,
Flavor flavor, yes!
First step is we’re taking
these sweet potatoes, right?
And this is how I do mine
’cause I’m actually making
it in the air fryer.
So now we’ll take this to the stove
and boil it,
(winking sound) for about
eight to ten minutes.
‘Cause you don’t wanna over boil them,
just to get them just soft enough
so when you put them in the air fryer,
they’re cooked down.
– Mmm, gonna be crispy.
– A little crispy, that’s what we want,
so they’re just soft enough
but not too soft to where they get mushy.
Now we’re going to season them.
Go ahead girl.
– [Choyce] But mom.
– [Tabitha] Yeah sure.
So like that.
Yeah.
A little bit of grape seed oil,
to help the seasoning stick
on them a little bit, ‘kay?
And because also I’ll
be using the air fryer,
and we normally have no
oil in the air fryer.
– So we’re gonna pull all of this
in the air fryer?
– Mmhmm.
– Oh.
– Yeah, alright let’s get your seasoning,
and which one did I tell you
you could use the most of?
– The multi-spice.
– That’s right.
– Cause it has no salt.
– C’mon Choyce.
You see that? Did you catch it?
Very good.
– Want me to do it?
– Yeah, go ahead.
– Oh.
– You can put as much as you like
if that’s your business.
Yeah.
– You see that?
– Yeah girl.
– And you say I don’t be cooking.
– Well you do something.
– Huh?
– Oh yeah.
– Okay, that’s enough.
– Nah.
– [Choyce] Oh.
– OKay look,
if you move it around,
and you move it around
and you don’t see no seasoning
on the other pieces that mean
you ain’t got enough seasoning.
Don’t be afraid of it.
This one you don’t have to be afraid of
‘caus ain’t no salt.
– That’s a lot. That’s why-
– It’s alright.
Let me show you the trick.
This is when you’re a pro.
(sound of lid popping open)
– Oh, you use the big side.
– You can open this side.
And now it’s the flick of the wrist, okay?
It’s the flick of the wrist.
So when you do it, you
do it like so, like that.
– Oh.
See that?
Now that’s how you season. (laughs)
With no salt.
Now thee other ones you can do
’cause that’s how you season, gently.
Mmhmm.
Yeah, you just put a little bit of that.
See that.
Yeah.
– That’s good.
– Uh huh, very good.
Now put you little taco seasoning.
Girl, c’mon yeah.
Alright, that’s good.
Okay?
And now we’re going to mix it all around.
See that? This is when your
hands dirty in the kitchen.
But make sure your hands is clean
before they get dirty.
Okay, very good.
Alright, so you see how we season that up?
– Yeah.
– And the oil helped this stay on there.
– Mmhmm.
– Right? Nice.
Now…
– Smell good.
– Don’t it smell good?
So I’m going to let you
put them in the air fryer.
– Dump it all in there?
– That’s right.
– Okay.
– Yeah, dump it all in.
So like that.
See that?
Now we’re goin-
Well you know how to use the air fryer.
– Turn it on.
– Right, so 370F for 15 minutes,
but we’ll check it at about seven minutes
just to make sure.
– How you? Oh.
– It’s already on, just start.
Now that’s simple enough.
it’s just pushing a button.
(Choyce laughs)
Yeah, and we’ll wait a few minutes,
and when it get ready honey,
we’ll be ready to build it on up.
Alright, the air fryer has
did the little beeping thing,
that means it’s done, okay?
Here we are (sings).
– [Choyce and Tabitha] Ooh!
– Do you see that? Smell.
Oh my God, it already
smell in the whole room.
Honey, you can just smell it.
So now what we’re gonna do
is take it, and dump it in a bowl.
Like so like that.
Ooh! C’mon.
Oh my God, like yes.
You need a couple of them off of there.
Got ’em?
– Mmhmm.
– Yeah, also a little bit of mushroom.
– (laughs) You’re gonna get this mushroom.
– Yeah girl, gotta get
that mushroom, honey.
– Gonna get this mushroom for you, girl.
– Yes, okay very good.
Put that back, and now,
we’re gonna build the taco.
(Latin music)
Now, for the most favorite part.
It’s time to eat it, honey.
Get into it.
Shall we taste it?
Oh…
– Okay…
Wait a minute. A little toast?
Ooh.
Ooh, and God we thank you, amen.
Let’s try it. Mmmm.
