Hello Greetings, my name is Chef Harpal Singh Sokhi,
and I am making some special fasting recipes.
It is a bit difficult to cook food during fasting because
dishes becomes very limited during fasting
and than you think what to do.
It is a cleansing act which detoxifies the body
that is why dishes becomes limited during fasting.
But the fasting food can also be interesting if you make it in a interesting way.
I am making Suran Ki Sabji,
most of the people also say it as Suran ki Khichdi,
I am adding an interesting element,
to make it sweet & spicy.
To prepare it first of all I need,
3 Tbsp of Ghee,
1 tsp of Cumin Seeds,
1 tbsp of Sesame Seeds,
along with that 1/2 cup of Peanuts,
if raw than add before and if fried than you can add later,
I have raw peanuts so I am adding it before,
cover & cook it for 2-3 minutes,
I have cleaned & washed the Yam from the outer side, grated & soaked in water.
After that we will put, grate it from the larger side so that you get the big pieces
do not grate it from the small side because it will get mixed up,
from larger side you will get proper pieces.
As Sesame Seeds & Peanuts are browned well,
squeeze the Yam
and add it in the pan.
Cover & cook it for 15 minutes,
and keep mixing it in a while.
When it will be cooked well at that time we will add other spices.
We have seen a very interesting element during fasting
that few people do not eat red chillies,
few people avoid eating few things during fast,
few people add sourness few people don’t
So you can finalize your ingredients according to you by keeping the main ingredient.
Importantly you have to add Rock Salt in fasting recipes,
Cumin Seeds is mostly used by many people, you can also use it the way I have used it.
So we will cook it for 15 minutes,
When Yam is cooked well after 15 minutes,
the way I told you that keep mixing it in breaks,
so that it is soft & crisp well,
this quality should be there & keep stirring it
See this big grated Yam,
as I told you, the advantage of them is that they do not stick.
Now we will add spices,
and for that first of all add
Rock Salt to taste,
the fasting salt we have added
along with that
1 tsp of Red Chilli Powder,
also add Jaggery,
the taste of salt & jaggery
will bring a slight sourness & sweetness to the dish
so add 2-3 tbsp of Jaggery,
and melt the Jaggery,
as Jaggery is melted & mixed well
at last add final ingredient
that is 1 cup of grated Coconut
add fresh Coconut
and mix well.
The taste will be very interesting in its own way,
the creaminess of Coconut,
salt has its own taste
along with that Peanuts,
so we have mixed will
and Jaggery is melted & mixed well.
The interesting Sabji is ready,
As I say that this is very interesting that you can enjoy it not only during fasting but anytime.
To serve it I have taken a bowl.
Garnish it with freshly grated Coconut
and here special fasting dish is ready for you.
Now enjoy eating a bowl & stay healthy,
spices are less which will not affect the stomach.
But when you will eat this you will enjoy it alot.
