Hey my friends! Welcome to today’s episode and if you are new to the channel am so happy to have
you here. Today is a very special episode
because so many of you guys have
requested that I do another collab with
one of my favorite youtubers, Olivia! Hi Olivia, I’m
happy to have you here. So on Monday I
shared three mug breakfasts with you and
you guys seem stoked about them. So today
I am sharing two more mug meals and
Olivia is also sharing two. Each have a
savory and a sweet.
If you’re going back to school, or if you’re in a dorm, or just looking for a quick fix these
are going to be perfect for you and they
are absolutely delicious. So if you’ve
never seen Olivia’s channel she is
“LoveHealthOK” on YouTube and Olivia will you tell us
a little bit about your channel. Olivia: So I do a
lot of dessert made healthy. Alyssia: So what are the
recipes that we are going to be making on your channel? Olivia: Well for our savory dish we are gonna be
making a low-carb pasta and it’s only
five ingredients so it is super duper
easy and it’s vegan friendly for those
of you who are vegan out there. For our
sweet dish we love avocado on my channel
so of course we had to make an avocado
mug cake. It’s simple, five ingredients
with a two ingredient avocado glaze.
Alyssia: And don’t forget to subscribe. Both of
my mug meals are vegan and we are going
to start out with my savory dish which
is a burrito bowl in a mug. It’s a burrito mug,
it’s a burrito bowl mug, it’s a burrito bug.
So for the burrito in a mug you are
going to need a mug and
for a burrito bowl, I mean if you already
have your rice prepped you could of
course just throw everything into a mug
instead of a bowl but that wouldn’t make a very
good video. So today I’m going to to show you how to microwave rice, a single serving. Now this can be a
little bit tricky I’m using a 1000 watt
microwave which is pretty standard but
if yours is not 1000 watts you’re gonna need
to adjust the timing accordingly.
Also I recommend a larger mug. So this
is about 14 ounces, if you can get the 20
ounce one that’s even better because the
problem with rice is when you’re cooking
a single serving amount in a small dish
there’s not as much room for the water
to expand. Sorry. So it’s a small dish
so you just want to be careful and always
keep an eye on it. Olivia: So the first step is
to add a quarter cup of rice with half a
cup of water into your mug and you want
to do about a 1:2 ratio. Alyssia: So into the
microwave this is going to go on power
level high for about one to one and a half
minutes. It kind of depends, you just
want to go until it’s boiling. So
once it starts to boil or it looks like it’s going
to expand over that’s when you wanna stop it.
Olivia: So once your rice starts boiling you want to
let it sit for a minute and after it sits
for a minute you’re gonna let it go
again in the microwave at half power
for 5 to 6 minutes. Alyssia: Now if you don’t have
the ability to change the power level on
your microwave you can just let it go until it boils and then let it sit for a minute and then let it go until is boils
and then let it sit for a minute and let it keep doing that
like 4 or 5 times until it’s cooked. Olivia: So after
you’re done microwaving you want to
actually let it sit for about 5 to 6
minutes first of all because it’s
going to be super hot and secondly you
want to make sure the rice absorbs all
the moisture from the water and now you
can observe your perfectly cooked rice. Alyssia: So
once you have your cooked right you can
go ahead and add any of your favorite
burrito bowl ingredients. So the great
thing about this recipe is it’s kind of a
hodgepodge thing you just throw in
whatever you have leftover. You know
beans or vegetables. So I just have some
of the things I had lying
around. Let’s go ahead and fill up our bowls. Olivia: Cheers I’m super excited. Alyssia: Cheers to us.
Ok I’ve got some beans, maybe tomato, you
might make a little bit of a mess. So this is also all vegan everything is vegan. I’ve got beans
for protein, I got vegan cheese you could use regular. Olivia: It’s like do it yourself Chipotle. Alyssia: It is,
DIY Chipotle in a mug. Now it can get a little messy here. Olivia: Smells so good. Alyssia: I know it does. Olivia: So
once you’ve filled up your mug with your favorite
ingredients you are gonna go ahead and stick
it in the microwave for a minute. Zap it so it’s heated up in then we’re gonna eat it.
Alyssia: Hey Olivia what time is it?
Olivia: It’s time for the taste test.
Alyssia: It’s just like Chipotle but healthier
because you are in control of all the
ingredients and how much goes in there. Olivia: And you don’t have to put anything in there that you don’t want to
or if you wanted to add other stuff you can. Alyssia: You are in control of the sodium. So I drained and
rinsed my beans and corn and then seasoned it
myself. You can do whatever you want
that works for you. If you want this protein
packed you could add chicken you could
add tofu you don’t have to keep it vegan.
Cheers to us. For my sweet mug meal I
have a mint chocolate chip mug cake. Olivia:
Super excited for that love mint chocolate chip.
Alyssia: This is seriously one of my favorite
treats lately. It is so easy to make and
especially with the holidays coming up
the mint flavor it’s got me really
excited. So the ingredients that you will
need a quarter cup of oat flour now I
make my own oat flour by just grinding up oats but make sure that you get certified gluten-free
oats if you really need this to be 100%
gluten free. Also I do not recommend
coconut or almond flour for this recipe
because it’s a little bit too dense. You
can use an all-purpose flour or all-purpose
gluten-free flour but if you really need
a coconut or almond flour you might want
to check out a Olivia’s video. Olivia: Cuz that mug cake
might just be made with coconut and almond flour. So the next thing you’re gonna need is a sweetener of
choice and we really love coconut sugar
it is so good. But if you want this mug cake to be
bright, vibrant, and green coconut sugar
is not the best idea just because of the
coloring. So you could use something like
Stevie or Xylitol which is white and
it won’t change the color of the mug cake. Alyssia:
Or even a regular granulated sugar. You’ll
need a half teaspoon of baking powder to
make it rise. So in the way that we are
getting this mug cake green is with the
avocado, which will be mashed. Now it is
very important that you measure out the
two tablespoons of avocado that has
already been mashed.
You don’t want to just scoop out two
tablespoons of avocado from the
avocado. Make sure you mash it up and then scoop it.
Olivia: Otherwise it’s going to be chunky and gross.
Alyssia: It doesn’t work as well I tried.
Olivia: So next you’re going to need 1 1/2 teaspoons of
melted coconut oil and you don’t need a lot
of oil just because the avocado already has natural fat
in it and also this means you won’t need an egg.
Alyssia: Which makes it completely vegan
Olivia: And then we’re going to use 1 1/2 tablespoons
of a milk of your choice. We
are going to be using almond milk in this recipe
which happens to be my fav. Alyssia: Me too or cashew
milk or coconut milk. Olivia: Or a blend. Alyssia: I just got
the almond coconut blend I haven’t had it yet. Olivia: so
good. Alyssia: You will need a quarter teaspoon of mint extract or peppermint extract it doesn’t really matter.
Most people say that they taste about the
same and most people that can tell a
difference prefer peppermint extract but it
doesn’t really matter whatever you want.
Olivia: and my favorite ingredient chocolate
chips and you can use dairy free, vegan,
paleo, whatever type of chocolate chips
that you want to use. Alyssia: You are simply
going to mix all of those ingredients together in
your mug adding the chocolate chips last
and you can use the milk to adjust
the consistency you want it to be just
like a cake batter. Olivia: Then you’re gonna stick
it in the microwave for about two
minutes but it’s going to vary depending on your microwave and how many watts it is. Alyssia: And
boom a mint chocolate mug cake that is
naturally colored no artificial colors
and if you don’t want the mint flavor you can
always just make an avocado cake and leave
that extract out. Shall we give it a taste?
Olivia: We should.
Alyssia: MmMm. Look at that texture man.
Olivia: The chocolate though. Alyssia: I’ve tried so many mug cakes that are just fails and this one
I’ve revised the recipe so many times and it’s
actually like a cake and it’s really
green like a minty green. So those are my
