Ingredients: shiitake mushrooms,
pretty colored vegetables
(paprika, carrot, cucumber, onion, etc.)
Remove the shiitake’s pillar by hand.
If it’s difficult, you can cut off the upper part of the pillar with a knife.
Cut them into bite-sized pieces.
I divided it into 3~4 pieces.
Cut the vegetables for the sauce.
Shape doesn’t matter. Cut whatever you want.
Cut the cucumber into half-moon shapes.
Slice the carrot, too.
Cut the pretty colored paprika into appropriate sizes.
You can use broccoli, mushrooms, anything else.
I’m done with preparing vegetables.
Season with sesame oil, soy sauce, and salt.
You’re going to dip fried shiitakes in the sauce, so you can skip this process.
2 Tbsp of starch
Coat a thin layer of starch.
Actually, you can just fry them like this.
I’m going to make frying batter to make them more crispy.
Put starch and frying powder in a 1:1 ratio.
You can use either one.
Pour water little by little to make batter.
Make it a little thick.
Turn on the heat and raise the oil temperature.
When you drop a little batter and it comes up, coat with batter and fry.
Then, fry them again before eating.
You have to fry them twice to make more crispy.
[Sweet and sour sauce]
200ml of water(3/4 cup)
2 Tbsp vinegar
2 Tbsp sugar
2 Tbsp soy sauce
Mix soy sauce, sugar, vinegar basically into 1:1:1 ratio.
And you can adjust it to suit your taste.
When the water boils, put vegetables.
Put 1 Tbsp of starch and add a little water to make starch water.
Pour the starch water little by little to make it thicker.
If it gets thick enough, it’s done with sweet and sour sauce.
Fry shiitake mushrooms again before you eat.
